    Pinot Noir (PEE-noh NWAHR)

    The Pinot Noir grape has been famously nicknamed “the Heartbreak Grape” due to its notoriously finicky nature and the trouble that growers go to in order to ensure a successful harvest. The Pinot Noir Red wine originates in France. 

    Taste: Delicate savoury aromas and red fruit flavors of cherry, strawberry, raspberry and plum are accompanied by additional complex flavors which can emerge as the wines age and mature. These additional flavors include fig, truffle, wood smoke and violets as well as forest floor and animal notes of mushroom and leather. Age can add great complexity to the best wines.

    Tannin: Low to medium

    Acidity: High

    Age: Most are best when young, while top quality wines develop great complexity with age.

    All around the perfect wine, my wife and others say.

    This is the easiest to make out of about 10 styles I'd tried, and most drinkable in 30 days, althoough I make several at a time, so I can wait 3 months where it is awsome, priceless. You can even put it in a 6 gallon bucket, throw in the yeast, put the lid on, keep it around 73 degrees or so, wait 30 days or so, rackit, siphon it out leaving 1 inch at bottom, and start drinking it right away, without all the other ingredients,racking, etc. Just pour a glass or two and wait a couple of hours to air out, and it looses it's off taste. Anyway, it is fun to make, a tasty elixier(we drink the med. or heavy bodied ), good directions if you go the full 6 packets route, super well packed up, and quick to get to you,8days to me near Mt. St. Helens,not too near. Try several kinds you think you might like and you won't go wrong, all are very good.
