Cabernet Sauvignon (ka-ber-NAY saw-vee-YOHN)

Cabernet Sauvignon is the world’s most popular red wine! Cabernet Sauvignon is very tannic when young and must be aged at least a decade, so is often blended with Merlot or Cabernet Franc to cut down on aging time and soften the tannins.

Taste: Aromas and flavors of blackcurrant, black cherry and blackberry, as well as vegetal notes of green bell pepper and mint, together with vanilla and spice from oak. 

Tannin: High

Acidity: Medium to high

Age: Most are made to be consumed within a few years of release, but higher quality wines need several years to soften their tannic structure and develop their full flavour profile.

totally fantastic tasting Cab, some of best I've *****

Tastes full Cab flavors, a full 11% or so, comes quick and super well packed, and comes with several packets of add ins. Sometimes I just add the good water to get my pail to 6 gallon, and throw inthe yeast package only, wait 30 days,keep it around 74 degrees, rack it and bottle or drink, and it tastes great, even a bit better after 2-3 months tuning up. But I usually follow the simple directions they give and doing the rack at 14 days, also. Probably a good idea if you plan on waiting a year to drink it (I usually save 1 of the 26-28 bottles in each batch.) highly recommended.
